Why the Sabbath? Does it matter which day is kept holy?

Think of a young woman, newly married to the man of her wildest dreams. She wakes up on her first morning back at work after their honeymoon. Taking off her shiny, new wedding right, she places it carefully in it's box on her dresser and heads off for a shower. When she returns to get it, she notices the ring her daddy gave her for her 16th birthday is beside her golden band. Now, does it matter which ring she wears to signify her marriage covenant?
Yes! Her daddy's ring, special as it may be, has no connection to her marriage at all.
It's the same with the Sabbath. Just as a wedding band is a sign of love and fidelity, so God has given us the Sabbath as a "sign between me and you throughout your generations." (Exodus 31:13) And, just like a wedding ring, we can't pick and choose a similar day to substitute for our sign.
Faithfulness to the Saturday Sabbath can be traced from the creation of our world to now in a fascinating history. There is no proof of the Sabbath being changed to Sunda as many are lead to believe for why would a God who claims to be "the same yesterday, today, and for ever" (Hebrews 13:8) suddenly decide that after 15 years of marriage it is now okay for our friend to wear her dad's ring as a sign of marriage and everlasting love to her husband? It's perhaps a preposterous idea, but quite fair I think.
And that's why the day matters and I keep the Sabbath.
